Management behavior observations.
At times I saw the floor manager trying to communicate to the host stand from the end of the bar by the kitchen (~50 ft away).
At 8:00 when the manager observed the build-up of empty table he became a surrogate hostess, assisting the hosts with table status availability and front desk assistance.
Never did I see the manager talking with the customers seeing to there dining pleasure and satisfaction. All he could do was to try to keep up with the next crisis, picking up empty glasses, clearing tables, hosting, standing-looking and trying to figure out what crisis would be next.
