While Japanese cuisine is often thought to adhere strictly to tradition, it hasn't simply been passed down through generations; it has also evolved by incorporating new ingredients and seasonings.

This evolution was very slow, perhaps unnoticed only after many years had passed.

Today, we are surrounded by a truly diverse array of ingredients.
