The vertical thread of the "food culture that has continued since the Kaga Hyakumangoku" (one million koku of rice) is layered with the horizontal thread of "seasonal delicacies from Kanazawa and Noto," and carefully woven into a single dish. That is the cuisine at our restaurant.
We combine traditional principles with modern sensibilities to capture the best moments of the ingredients and prepare them to the brim.
The water we use is deep-sea water sourced from Noto. The rich flavors of the land truly blossom in the waters of that land.

We bring you Ishikawa's bounty throughout the seasons in lovingly prepared dishes. We offer dishes that bring out the full flavor of carefully selected seasonal ingredients, focusing on seafood from all over the prefecture, including Kano crab, tilefish, winter yellowtail, blackthroat seaperch, Noto oysters, and Noto octopus. Each ingredient is prepared using the most appropriate cooking method, whether boiled, broiled, grilled, served in a bowl, or sashimi, subtly bringing out the natural aroma and flavor of the ingredients.
We also use Noto's deep ocean water for our dishes, delivering every last bite of the rich flavors nurtured by the land. Combining traditional techniques with modern sensibilities, we deliver new experiences with every visit.
