At Grandfather’s Table, two chefs come together over a shared legacy, one that begins at home. On 1 August, Chef Kentaro of MICHELIN-starred Shisen Hanten and Chef Damian D’Silva of Gilmore & Damian D’Silva present a thoughtful four-hands experience shaped by heritage, memory, and craft. Rooted in their respective traditions, Chef Kentaro’s Szechwan-Japanese lineage and Chef Damian’s Eurasian and Peranakan roots. The menu brings together ingredients, techniques, and stories that honour the grandfathers who inspired their culinary journeys. This is more than a collaboration; it is a meeting of cultures at the table, where past and present are shared through every dish.
