Ribeye refers to the center part of the rib roast, and is a very popular cut because it has a good balance of lean meat and fat and is also very tender. Tomahawk refers to the axe used by Native Americans. It is said that the name ribeye comes from the fact that when cut into pieces with the bone, it resembles a tomahawk in shape.
