Our chef serves meals chosen specifically for the season using fresh ingredients. Come and discover something moving. Edo-style aged sushi, using methods to age fresh fish, bring out true umami. We use Tsuyahime, organic rice from Yamagata, with two kinds of vinegars: a flavorsome, unique blend of red vinegar, and a naturally sweet vinegar.
