From Fukuoka: Chef Tsuyoshi Fukuyama, who continues to introduce Kyushu’s culinary culture to the world; Executive Chef Shigeru Fujii of “Ryotei Sagan,” who creates beautiful and original kaiseki dishes while honoring Japan’s traditions, seasonal rhythms, and changing seasons; and Executive Chef Takashi Teda of “The Ritz-Carlton, Fukuoka,” who is shaping a new culinary landscape.
From Niigata: Hirosuke Kobayashi of “Tokiwa Sushi,” who builds upon Edo-style sushi traditions while emphasizing local ingredients to create “sushi found nowhere else but Niigata”; and Chef Naoki Susa of “Uya,” whose philosophy—“Minatomachi Niigata Gastronomy”—centers on wood-fired cooking, using it as a medium to express local producers, crafts, and culture on a single plate.
French cuisine, kaiseki, sushi, wood-fired cooking—five chefs from diverse backgrounds, techniques, and regions unite here. Blending Eastern and Western elements, tradition and innovation, they craft an exclusive one-night-only menu available only on this night at this venue.
