Located in Ina City, Nagano Prefecture, in the Shinshu Ina Valley surrounded by the Central and Southern Alps and traversed by the Tenryu River, Kasuga Brewery, brewing the renowned sakes "Inokashira" and "Ryuyu," is a small brewery run by two brothers who graduated from the Tokyo University of Agriculture's brewing department. They meticulously brew all their sake.
Their flagship brand, "Inokashira," derives its name from "Ino-kashira," meaning "the best spring water" or "a place where good water springs forth." Brewed using naturally sourced groundwater from the Central Alps water system, it's a rich, flavorful sake that beautifully showcases the softness characteristic of soft water.
