We use “Yasashi-me Yoshihē’s Rice” at our restaurant. It’s a premium rice from one of Kyoto’s leading rice merchants, carefully selected for its sweetness and rich flavor. Our signature kasu soup is made using “Ine Mankai Kasu,” a rice cake mash supplied by Muki Sake Brewery in Ine Town—a town renowned for its boat houses. The kasu from this pure rice sake brewed with ancient rice varieties boasts wonderful sweetness and depth, resulting in an unparalleled kasu soup.
