This chocolate and strawberry parfait, the first of its kind at Six Senses Kyoto, uses chocolate from Minimal - Bean to Bar Chocolate, a Japanese specialty chocolate shop.
It begins with a high-cocoa crème au chocolat made with FRUITY-Madagascar, a refreshing chocolate reminiscent of berries and dark fruits that brings out the natural flavor of the cacao bean. The flavors of cacao and strawberry seamlessly blend, passing through layers of fruit and black tea before finishing with a crème au chocolat made with NUTTY-Sweet, a chocolate with a nutty aroma and a refined vanilla-like sweetness.
The ice cream is banana chocolate ice cream infused with homemade amazake (sweet rice drink), and the strawberries are left unspoiled, allowing the natural flavor of the seasonal ingredients to shine through. The high-quality chocolate is layered in layers of flavor and texture, creating a rich, three-dimensional experience with a blend of sweet, sour, and bitter notes.
