Akbar Yusuf, Assistant Manager Beverage R&D at Desa Potato Head Bali, and Ajung, founder of ACS, will transform overlooked, flavour-rich parts of ingredients—from aromatic peels to fragrant stems and fruit offcuts—into refined infusions, syrups and garnishes.
Served in glassware created by Wasted by Potato Head from repurposed materials, each drink reveals the flavour, beauty and potential held within ingredients and materials that are too often discarded.
