Our menu changes daily and pays homage to two of the most primitive and ancient forms of cooking- Fire & Fermentation. Fire, charcoal and smoking deliver a tasty earthiness, while the magic of fermentation will elevate the flavour profiles of all our dishes. You’ll find plants & vegetables gathered and preserved from around Hakuba & Otari, as well as local meats and fish presented in a new light.
