Our focus is on "Nigiri", traditional Edo-style craft: enjoy our “chef’s selected course”, including "appetizers" filled with playful French and Italian techniques. With the never ending pursuit of “how to make fish taste delicious” of Edomae style, we also pursue new techniques such as smoked aging.
