"Uya" is themed around the natural elements of "water, earth, and wind," and cooks ingredients nurtured by Niigata's land and climate, centered around "fire," an element that has existed throughout human evolution. "Minatomachi Niigata Gastronomy" connects Niigata's history and food culture to the food of the future.
