《シャンパーニュペアリング》
①キュヴェ・セレクション・ブリュット（マグナムボトル）S.A ロジェ・バルニエ
黄色系果実に程よい酸とミネラルの混じるバランスの取れた仕上がり。通常よりも奥深い味わいとなるマグナムボトルは、熟成原酒の多いこのシャンパーニュならではの蜜の風味が中盤から程よく感じられます。

②エクセランス・ミレジメ2002 （マグナムボトル）ドリアン・ヴァランタン
眩いばかりの黄金色の液体からは、オレンジの砂糖漬けや蜜の風味を帯びた優しくも官能的で甘美な熟成風味に包み込まれます。いまだ綺麗な酸があり、緻密で洗練な質感がキープされた印象で、非常に長く精緻な余韻の風味には優しいモカ系やマロングラッセのようにも感じられます。

③ロゼ・ド・セニエ 4ニュイ・ブリュット・ナチュール S.A ロジェ・ブリュン
ピノ・ノワールの果皮を長く漬け込んだロゼシャンパーニュ。しっかりとした色調で、赤系果実や白いスパイスのような風味にきめ細かいタンニンとクリーミーな泡立ちがあり、鳥系の赤身（鴨）などのローストとも合うしっかりとした仕上がりです。

④コトー・シャンプノワ ヴェルズィ・ルージュ 2020 ピエール・ドゥヴィル
こちらもピノ・ノワールを使用。樽で2年間熟成させた影響で赤系果実に優しいロースト風味が混じる仕上がりです。ミディアムボディできめ細かいタンニンがあります。

⑤ラタフィア S.A ブーシェ・ペール・エ・フィス
シャンパーニュの果汁にフィーヌをブレンドして熟成させた物。ドライプルーンやショコラノワール系にほのかに茶系スパイスの風味に程よい酸もある上品な仕上がりの食後酒です。ガトーショコラにコーヒーやアーモンド系のアイスなどとの合性の良いスタイルです。

◆ゲストソムリエ：下山有康　（フランスワイン専門店ラ・ヴィネ）
2000年にホテルモントレ銀座および横浜のレストランでキャリアを開始。フレンチレストランのソムリエとして勤務しつつ、ウエディングサービスにも携わる。その後、フランス料理店「パリの朝市」を経て、2015年にラ・ヴィネ恵比寿店へ入社。2020年には虎ノ門店の立ち上げに参画し、現在は恵比寿店副店長として、フランス現地での買い付けやイベント企画・運営を担当するほか、ワインイベントの企画・運営にも携わり、幅広い知見と経験を活かして活躍。
