A chestnut mousse made with an abundant amount of rich French chestnut paste and cream, accented with chestnut skins. The refreshing acidity of blackcurrants enhances the chestnuts’ rich flavor. Chestnut puree is also incorporated into the sponge cake, lending it a fragrant aroma so that each bite releases a delightful chestnut essence. Layered on top are a subtly herb-flavored ganache and light, springy walnut nougat, creating a wonderful contrast in texture and taste. Valrhona’s “Manjari” chocolate and almond crumble add a pleasant crunch. Finally, chocolate pinecones and bonbons adorn the top, adding festive charm to any Christmas table.
