This year's strawberry parfait theme is—a strawberry parfait that lets you experience Cleopatra through "taste"—
The first bite is the sweetness of seasonal strawberries. From there, spices, acidity, and richness are layered on top, creating depth of flavor. Spice milk gelato, white wine-flavored strawberry sorbet, pomegranate jelly, roasted strawberries, cheese, and dates are all carefully layered one by one. This parfait fully expresses the unique characteristics of strawberries.

A drink combining domestic citrus fruits such as Setouchi lemons, pomelos, grapefruits, and Hyuganatsu oranges with spring vegetables. A semi-raw lemon cheesecake and asparagus brûlée form the core of the layers, while grapefruit and pomelos fill your mouth with flavor. For accent, marinated roasted broad beans and tuiles are flavored with Himalayan pepper oil. This parfait lets you savor the taste of spring, combining the refreshing taste of citrus with the fragrant aroma of spring vegetables.
