Chef Katayama, a local of Gunma, has trained at renowned restaurants both in Japan and abroad, including Florilege, before taking to the kitchen. Each dish is a homage to the food culture of Joshu, and a unique interpretation of the local ingredients grown in the great outdoors, making it truly Joshu cuisine.
