Enjoy hamo's delicious flavors through a variety of dishes. Each course presents different expressions of this seasonal fish, prepared using various traditional cooking methods based on the day's finest hamo.
Hamo represents Kyoto's summer and autumn cuisine. We use the traditional "honekiri" bone-cutting technique for tender texture.

Gently swish thin slices of hamo through rich broth slowly simmered from hamo bones, and watch the delicate flesh bloom like a flower. Our house-made roasted shichimi spice enhances the natural umami of the fish.
