A seasonal omakase in Ebisu, evenings only. Built in the lineage of Japan's single-ingredient counter traditions — sushi, tempura, yakitori — but assembled through Mexican technique. The course is built around the day's fish, with masa stone-ground in-house and tortillas shaped one at a time.
