Chiringuito Escriba's paella uses domestic Valencian rice, which is low in moisture and firm, to recreate the taste of the country. It is not the usual paella, which is baked over an open flame and then cooked in an oven, allowing the concentrated soup made from seafood, chicken, vegetables, etc. to permeate every grain of rice, resulting in a carefully crafted "authentic paella."
