We are delighted to present the SUSHI Christmas Gala Dinner 2025, a festive evening menu that brings together the rich flavors nurtured by Japan’s winter and the true essence of Edomae sushi. Held at the SUSHI, an exclusive eight-seat venue on the top floor of the hotel, guests will savor masterfully crafted dishes, each prepared with utmost care by Head Chef Eiji Nakamura. The dinner begins with a selection of five small appetizers, including crab miso tofu topped with snow crab sauce, seasonal matsukawa flounder from Hokkaido paired with aromatic vegetables and house-made yuzu ponzu, and seared fatty tuna (ōtoro). The following course features winter mackerel and daikon radish, slowly simmered in a special miso blend to draw out a deep, comforting flavor perfect for the season. For the main course, guests will enjoy ten pieces of Chef’s Choice nigiri, including medium-fatty tuna (chūtoro), blackthroat seaperch (nodoguro), Hokkaido sea urchin, and fresh salmon roe, along with a sushi roll and red miso soup. The evening concludes with a beautifully arranged platter of premium seasonal fruits from Japan.
