Seasonal chestnut parfait (October 23rd to December 21st)We’ve packed in a variety of flavors—smooth pumpkin, the bitterness of tea, and a fermented blood orange savarin rich in umami beneath its tanginess—so that, despite the generous use of chestnuts, the dessert remains light and easy to enjoy from start to finish. On top of the glass, we’ve added a mille-feuille made with chestnut cream and custard, offering a delightful textural contrast as well.
