Inspired by the Main Building’s front garden. Silky panna cotta layered with lemongrass jelly, ringed with sweet-potato and orange gelées.
Enjoy the clean finish and the natural sweetness of winter sweet potatoes.
• Yurinoki (Tulip Tree) Mocktail
Chervil evokes a lush tulip tree in a white-wine glass. Gentle apple sweetness accented with dried ginger spice; Darjeeling and chamomile lend an elegant finish that pairs beautifully with the panna cotta’s lemongrass.

【Pear & Earl Grey Layered Parfait】
This autumn, themed on a “Misty French Garden,” we have created a refined parfait that layers aromatic ingredients such as pear and Earl Grey to evoke the elegance of the season. Enjoy a slightly bitter, beautifully balanced sweet treat perfect for long autumn evenings.
The parfait is crowned with a generous serving of turmeric-infused pear compote, garnished with chervil to evoke garden greenery, and finished with a delicate sugar-crafted pear stem for an elegant touch. Hidden beneath the compote is a smooth, Earl Grey–scented parfait glacé, while the middle layers feature jelly and finely chopped celery, adding delightful textural contrasts.
Midway through your tasting, pour over the accompanying caramel sauce to harmonize the subtle bitterness and sweetness, enhancing the juiciness of the pear. The lingering spiced notes create a multifaceted, autumnal flavor experience to be savored with all five senses.
