“Japanese Afternoon Tea -Fermentation-" features original creations that reinterpret the deep umami and aroma of traditional Japanese fermented ingredients—such as miso, sake lees, shio-koji, and amazake—through a contemporary lens.
In our spring menu, available from March 1 to May 31, you may enjoy 13 savory selections that celebrate the season of new blossoms, along with three exquisite wagashi created in collaboration with Kyoto’s long-established confectioner, Kameya Yoshinaga.
