Seating arrangement
We offer a Chef’s Table setting where guests can dine in close proximity to one another.
The table layout follows a “table dot” style.

While we prepare the Spring exhibition in our gallery, we will present a one-week-only intimate preview of the upcoming Spring seasonal menu. Available exclusively at our 1F Chef’s Table. (The 2F gallery will be closed during this period).

Summer Nostalgic
夏の記憶は、どんな香りがしますか。
蝉の声。夕立の匂い。縁側で食べたスイカ。花火の煙。祖父母の家へ向かう道。
誰の心にも、それぞれの夏があります。
「Nostalgic（ノスタルジック）」という言葉は、単なる懐かしさを意味するものではありません。
近年の心理学では、過去の温かな記憶を思い返すことは、心を穏やかにし、不安を和らげ、今を前向きに生きる力を与えてくれると考えられています。
思い出は、過去に置いてきたものではなく、今という時間を豊かにしてくれるもの。
81では、その感情を料理で表現しました。
幼い頃に見た夏の景色。日本の原風景。季節の移ろい。そして、いつの間にか忘れてしまった夏の香り。
記憶の中にある情景を、現代の料理として再構築したコレクションです。
2026年7月20日より、Summer Collectionのスペシャルエディション 「Summer Nostalgic」 をご用意いたします。
期間は8月31日まで。
この夏にしか味わえない、ひとときです。
この季節、この空間、このコレクションをお楽しみいただけるのは、今だけです。
皆さまにとっての夏の記憶とともに、このコースが新たな思い出となれば幸いです。
