Seasonal chestnut parfait (October 23rd to December 21st)We’ve packed in a variety of flavors—smooth pumpkin, the bitterness of tea, and a fermented blood orange savarin rich in umami beneath its tanginess—to ensure the dish remains light and enjoyable from start to finish, while making generous use of Tanba chestnuts. On top of the glass, we’ve added a mille-feuille of chestnut cream and custard, offering a delightful textural contrast as well.
