The chef, born and raised in Hakuba, will serve dishes using Hakuba ingredients such as ""Shinshu Salmon"" brand trout, Hakuba pork, Shinshu Fukumi chicken, and a variety of vegetables and rice grown by Hakuba farmers. The restaurant is located inside Yuki no Sou, an accommodation facility in the Happo area, and is open for dinner only.
