Summer Nostalgic
夏の記憶は、どんな香りがしますか。
蝉の声。夕立の匂い。縁側で食べたスイカ。花火の煙。祖父母の家へ向かう道。
誰の心にも、それぞれの夏があります。
「Nostalgic（ノスタルジック）」という言葉は、単なる懐かしさを意味するものではありません。
近年の心理学では、過去の温かな記憶を思い返すことは、心を穏やかにし、不安を和らげ、今を前向きに生きる力を与えてくれると考えられています。
思い出は、過去に置いてきたものではなく、今という時間を豊かにしてくれるもの。
81では、その感情を料理で表現しました。
幼い頃に見た夏の景色。日本の原風景。季節の移ろい。そして、いつの間にか忘れてしまった夏の香り。
記憶の中にある情景を、現代の料理として再構築したコレクションです。
2026年7月20日より、Summer Collectionのスペシャルエディション 「Summer Nostalgic」 をご用意いたします。
期間は8月31日まで。
この夏にしか味わえない、ひとときです。
