A one-of-a-kind brewer's dinner that embodies the philosophy and skill of Toji (master brewer) Naohiko Noguchi, a treasure of the Japanese sake world. The Naohiko Noguchi Research Institute is a sake brewery designed from scratch in a remote mountain village in Komatsu City, Ishikawa Prefecture, at the age of 84 for Toji Naohiko Noguchi, one of the four great Toji of Noto and a recipient of the "Contemporary Master Craftsman" designation. In this place, which Toji himself arrived at in search of water, the snowmelt from the Hakusan mountain range becomes groundwater, supporting the lifeblood of sake brewing. The rice is grown in the rice paddies surrounding the brewery in cooperation with local farmers, using the sake rice variety "Gohyakumangoku". On the day of the event, Takashi Iwai, Director of the Naohiko Noguchi Research Institute, will take the stage to talk about his philosophy on sake brewing. Enjoy this along with a special dinner course at the Chinese restaurant "China Blue".
