Executive pastry chef Yoshida Osamu has chosen figs as the main ingredient for the second installment of the afternoon tea. Figs, which are in season and have fully colored and ripe, are a fruit with many charms, with a deep, mellow sweetness and gentle acidity, a unique fragrance, and a soft flesh with a crunchy seed texture. The fruit will be served during the period when it is at its most delicious, as recommended by fruit specialists such as producers and greengrocers from all over Japan, and pastry chef Yoshida Osamu.
