●KIRIMON’s commitment to Sushi
The Umami of Sushi is maximized by adjusting the temperature of the rice for each Sushi ingredient.
At Sushi KIRIMON, we carefully prepare selected Sushi ingredients and use different types of wasabi for each Sushi. We also use different soy sauces as needed. All of Sushi KIRIMON's sushi is special and incredibly delicious.

●Red Shari・White Shari　(Vinegered Rice)
[Akazu - Red Vinegar]
Akazu is made from fermented sake lees. Aged for more than 10 years, it is rich in nutrients and umami, which gives the vinegar a reddish color. When blended with rice, it creates the Red Shari.
[Komezu - White Vinegar]
White vinegar is made from fermented rice. Blending it with rice creates the White Shari. At KIRIMON, we make our special Shari by adding the flavor of Japanese soup stock with kelp during the rice preparation.
[KIRIMON’s Shari - Vinegered Rice ]
We purchase only rice grain of size and texture that Sushi KIRIMON requires from carefully selected production areas and credible farmers in Japan.
Blending different varieties of rice creates an original texture and flavor to produce the satisfactory Shari taste.

●KIRIMON’s Carefully selected Wasabi for Sushi
We procure fresh and flavorful Wasabi from the famous wasabi-producing regions. At Sushi KIRIMON, we use several different types of Wasabi to complement each ingredient and the Shari.

●Rare soy sauces
We use a variety of selected soy sauces for each ingredient. Sushi KIRIMON uses the best wooden barrel soy sauce selected from more than 150 varieties to enhance the flavor of the ingredients.
