*Frosted Elegance -ヌガーグラッセとシュトーレン-
ドイツの伝統的なクリスマス菓子「シュトーレン」と、フランス菓子「ヌガーグラッセ」を組み合わせた一品です。仕上げには、ふんわりとしたコットンキャンディを薄く巻いており、イートンメスのように混ぜながらお召し上がりいただくことで、食感と甘みの変化をお楽しみいただけます。
*Fondant de Chocolat à la Crème Anglaise - フォンダンショコラ アングレーズソース –
冬の定番ショコラを、温かくお召し上がりいただくフォンダンショコラとしてご用意しました。フォンダンの名の通り、中心からとろけ出す濃厚なショコラと、薄く白ワインのジュレで覆われたアングレーズソースを割って、同時にお楽しみいただけます。
*Potato Pavé -お口直しのポテト-
薄くスライスしたポテトをテリーヌに仕上げました。甘いデザートコースの中で一息つけるお口直しに仕上げています。
*Noël Mont Blanc -ブッシュ・ド・ノエル・ モンブラン-
お客様の目の前で仕上げるモンブランは、和栗本来の甘さを最大限に味わっていただくため、砂糖は一切加えずに仕上げました。スポンジ生地にはビターなエスプレッソを染み込ませ、生クリームは無糖のフェッテを使用し、素材の味を引き立てています。さらに、アーモンド・ヘーゼルナッツ・くるみの3種のナッツをローストし、細かくアッシェすることで香ばしさをプラスしました。
