A·Nyu (Ichi) is a lunch course available for only 8 guests. By utilizing seasonal ingredients, we carefully create one dish at a time, focusing on what is most delicious at that particular moment. The dishes are prepared by Ichi—who gained experience at A·Nyu, later became independent, and now returns to this place to embark on new challenges. While Ichi designs the course, it is completed under the supervision of Chef Shimono, taking advantage of his experience from A·Nyu as well. Lunch service is limited to a 2-hour set menu that starts at noon. At the 8-seat counter, guests share time with the chefs and enjoy dishes crafted just for that day. A·Nyu’s lunch time is also a place where each chef continues to pursue new challenges, leveraging their individual styles. Please enjoy the A·Nyu created by Ichi today.

■ Chef: Yuichi Sawayara
He gained experience at “Tater Yoshino,” “La Rochele Fukuoka,” “Makoto Aoki” in Paris, and “Roche”. After returning to Japan, he worked as a sous chef at A·Nyu to assist Chef Shimono, before opening “Ichi La cuisine au comptoir” in Akita City. The restaurant gained attention as a featured establishment in “Go! Eat! Myo!” He has now returned to A·Nyu and started anew as A·Nyu (Ichi).
