Winter's staple, fugu sashimi, is served refreshingly with ponzu sauce, pairing perfectly with sake. The golden eye snapper, at its most fatty this season, is finished with a yuzu-scented broil that highlights its rich flavor, pairing wonderfully with wine. For your final course, savor our barley grated yam rice, freshly cooked in a traditional pot.
