Sanemon is a brand of pork that Yamanishi Farm in Ibaraki is proud of. This Jiro-style ramen brings out the full potential of the pork's drinkable fat. Fresh pork liver paste is generously kneaded into the homemade noodles, which are carefully made one by one using the famous Showa-era Ono-style noodle machine. The deep richness and subtle flavor unique to the liver resonate with the light fat of Sanemon, creating a unique flavor. The amount of noodles is fixed at 200g (no extra noodles available). The golden ratio with the soup is maintained. The result is a delicious Jiro-style soup that is clear and flavorless, yet powerful. It is not heavy, yet extremely satisfying. The key to the soup is the sharp fat flavor of Sanemon's back fat. The ingredients other than the back fat are selected to be optimal for each occasion, creating a well-balanced flavor. The dish is finished with chopped garlic from Aomori's fragrant and sweet "Fukuchi White" to finish it off. We offer two types of meat. The regular version uses only Sanemon's shoulder meat, with a moist texture and sweet fat that blends perfectly with the soup. The special version adds shoulder loin to the shoulder meat, allowing you to enjoy the three-dimensional layers of flavor created by the two cuts. Rich yet easy to eat - try this supreme balance born from the quality of the ingredients and the clever design.
