Sashimi: Three kinds of seasonal fresh fish.
Tempura: Tiger prawns, large prawns prepared rare.
Flying squid with caviar, flounder, and large clams.
Raw sea urchin (2 ways to eat it).
Omi beef fillet, Kagawa white asparagus.
Kaga lotus root, bamboo shoots, broad beans, and Naruto sweet potato.
Palate cleanser: Three kinds of fruit tomato flavor comparison.
Vinegared dish: Seared scallops, rape blossoms, wakame seaweed, radish, and egg yolk in vinegar.
Rice: Tempura rose rice bowl topped with "Toki no Fuku" koshihikari rice from Sado, Niigata Prefecture.
