For this course, you may choose the braised whole dried shark’s fin in either Shanghai-style (soy-based) or Cantonese-style (salt-based). Our chef recommends the Cantonese-style. If you have a preference in advance, please indicate it in the “Special Requests” field as: “Shanghai-style × [number], Cantonese-style × [number].” You may also choose on the day of your visit, and it is fine to mix styles rather than selecting a single option.
