The fishing grounds of Awaji and Yura have fast currents due to the Kuroshio Current, and the fish caught there swim well, making them "thick meaty." We use fresh fish and seafood killed by fishermen from Awaji Island, who are said to have the best fish killing techniques in Japan, and we also mainly use seasonal vegetables grown outdoors in Awaji. Please give it a try.
