In the 1980s, The XO sauce was developed by the chef at the time of the Chinese restaurant "Spring Moon" in the Peninsula Hong Kong. We have developed the finest seasoning by using abundant high-class ingredients such as dried shrimp and dried scallops in miso. At that time, putting "XO cognac" on the table as an apéritif at a restaurant was popular as a status symbol, and the highest quality brandy "XO cognac" means "highest grade". It was named "Sho". It is ideal as a snack as it is, or as a topping instead of soy sauce for dim sum and tofu.
