The vertical thread of the "food culture that has continued since the Kaga Hyakumangoku" (one million koku of rice) is layered with the horizontal thread of "seasonal delicacies from Kanazawa and Noto,"
and carefully woven into a single dish. That is the cuisine at our restaurant.
We combine traditional principles with modern sensibilities to capture the best moments of the ingredients and prepare them to the brim.
The water we use is deep-sea water sourced from Noto. The rich flavors of the land truly blossom in the waters of that land.
From the dignified flavors and refreshing aromas to the subtle shadows of the setting,
Enjoy a meal that is "unique to this place, at this time."
