An exquisite omakase sushi experience in Kyoto's historic Go

Under the principle "Sushi is a structure," we built a restaurant where shari — the vinegared rice — takes center stage. It accounts for more than half of every piece, yet is almost never spoken of. Hidden behind the fish, quietly doing its work. We focused on that blind spot. Rice, water, vinegar, temperature — four variables. Not intuition, but reproducible structure.
