■ Craft Beer • Hida Craft Beer A small-batch brewery that pays meticulous attention to yeast and hops, producing beers with unique character. Brewed to bring out the blessings of Hida’s majestic nature and locally grown ingredients.
■ Japanese Sake • THE NIGHT WALKER Junmai Daiginjo Unfiltered Nama Genshu Named with the theme of a “night walk,” this sake is brewed from 50% polished Gohyakumangoku rice from Toyama and fermented with 701 yeast. It offers a light, refreshing acidity and a smooth, enjoyable taste.
• Ebi to Kani to Kidoki Hotate Junmai Daiginjo Unfiltered Nama Genshu Brewed in Gifu, a landlocked prefecture, with the idea of pairing perfectly with seafood. Made from the rare local rice “Hatsushimo” and G2 yeast, exclusive to Gifu breweries. A light and pleasantly smooth Junmai Daiginjo.
• Reisen Junmai Ginjo Hida Homare Hatsushibori Nama Crafted from Hida’s large-grained rice “Hida Homare,” known for its big shinpaku (white core), with delicate and soft flavors brought out through careful handling. This seasonal, freshly pressed sake offers fresh, vibrant flavors with gentle richness and a crisp finish.
• Reisen Daiginjo Ranjatai Named after “Ranjatai,” a rare aromatic wood stored at the Shosoin Treasury, this sake embodies the elegance and rarity of its namesake. It balances a gentle fragrance with a transparent, refined umami.
• Reisen Junmai Daiginjo Nakagumi Genshu Masamune The pinnacle of the Reisen series, brewed to achieve a sake of distinguished character. It features an elegant aroma, clear yet rich umami, and a pleasant lingering finish.
