Incorporating unique Okinawan ingredients such as fish caught off the coast of Okinawa, Okinawan pork, island vegetables, and brown sugar, this course allows you to enjoy the blessings of Okinawa with all your senses—not just in taste, but also through aroma and presentation. This course, which values a menu structure that highlights the individuality of each ingredient, changes with the seasons. Each dish is designed to allow you to experience the essence of Okinawa, focusing on the inherent flavors and aftertastes of the ingredients. Whether deepening your enjoyment of Okinawan flavors during your trip or discovering a new side to familiar ingredients, diners can enjoy their own moments of pleasure and surprise. For drinks, we offer wine and awamori pairings carefully selected to complement the cuisine. The awamori pairings are supervised by Erika Maedomari, the 37th Awamori Queen and certified Awamori Meister by the Governor of Okinawa Prefecture. She selects brands that harmonize with the taste and aroma of each dish, proposing combinations that enhance the delicate French sauces and cooking techniques with the aroma and aftertaste of awamori. For guests who prefer non-alcoholic options, we also offer mocktails made with Okinawan ingredients and seasonal produce.
