At HITO by TACUBO, the essence of each ingredient is honored through the ancient and elegant technique of wood-fire cooking.
We carefully source the finest seasonal produce from Hokkaido, transforming these treasures into dishes that embody the region’s rich terroir.
Signature creations include the Tokachi Herb Beef Fillet, masterfully grilled over open flames, offering a sublime harmony of tenderness, fragrance, and smoky depth.

To ensure the comfort and safety of all guests, we kindly ask that you review the following policies before booking your table:
Dietary Restrictions
We regret that vegetarian and vegan menus are not available.
We endeavor to accommodate food allergies and dietary preferences whenever possible. However, please be advised that complete allergen removal is not guaranteed due to our kitchen environment.
Guests with severe allergies should consult with us in advance before making a reservation.
Seating Requests
While we strive to honor seating preferences, specific table assignments cannot be guaranteed. We appreciate your understanding.
Punctuality
Guests arriving more than 15 minutes past their reservation time without prior notice may have their booking canceled.
Please notify us in advance if you anticipate being delayed.
Group Bookings

Cancellation Policy
To maintain the quality of service for all our guests, the following cancellation policy applies:
Standard Reservations (1–5 guests)
Cancellations on the day of, or one day before the reservation: 100% of the meal price.
Cancellations three days prior: 50% of the meal price.
Group Reservations (6–9 guests)
Cancellations within three days of the reservation: 100% of the meal price.
Cancellations four to seven days prior: 50% of the meal price.
Large Group Reservations (10 guests or more) and Private Bookings
Cancellations within seven days of the reservation: 100% of the meal price.
Cancellations eight to fourteen days prior: 50% of the meal price.
Dress Code
To ensure an elegant and comfortable dining experience for all, we kindly request smart casual attire.
Ski boots, bathrobes, in-room yukata, sleeveless tops, or tank tops are not permitted.
Wine Policy
Guests are welcome to bring their own wine, subject to the following corkage fees:
750ml bottle: ¥10,000 per bottle
Magnum bottle (1.5L): ¥20,000 per bottle
Each group may bring a maximum of two bottles, with only one magnum bottle permitted per group.
