For the main course, we use four-legged meat delivered directly from producers, cooked in a bone-in chunk using binchotan charcoal from Marmo Charcoal Factory in Mie Prefecture, and slowly cooked using bone conduction

Then, we use the leftover meat from the main course to prepare larb, the national dish of Laos
