Sushi Shomitsu, an 8-seat counter hidden in Nakameguro, is a Michelin one-star and among Tokyo’s hardest reservations. Chef Hisamitsu Yasuda began at 15, trained 15 years at Sushi Kō in Jiyugaoka, and opened in 2011. Known as “Uni-versal Studio,” it showcases premium uni sourced nationwide, offering a rare chance to compare varieties like Kitamurasaki, Ezo Bafun, and Aka uni.
