The research is not limited to the microscopic world but includes architecture, art, indigeneity, and the context of the cultured inheritors. At the restaurant, we express concepts discovered through research in the form of food and space.

DINNER TOUR - Voyage of Fermentation Universe -

TOUR LUNCH

You can experience both the FACTORY TOUR and LUNCH COURSE. You can experience the world of Yamamo in a comprehensive way, such as the sensuality of several types of miso in the preparation storehouse, pairing with wine and food in the moromi storehouse, and a course of dishes fermented with Viamver® yeast in the restaurant space. *The tour lasts about 40 minutes to 1 hour. In principle, lunch will be served after the tour.

FACTORY TOUR

While touring the brewery where the actual production takes place, you will be guided through traditional fermentation and the latest research on yeast, the history of the brewery, and its future prospects in the Iwasaki region. At each location in the brewery, you can compare miso pastes aged for different periods of time, and taste wine and food fermented with Viamver®︎ yeast (patent no. 7138354). *Only tastings will be provided, so if you would like to include both a tour and a meal, please select "TOUR LUNCH."
