Cocktail Story:
A long cocktail made with tequila, clear tomato juice and hints of mugwort, tightened with bergamot and lime. The salted mugwort tonic foam and spicy tomato garnish vividly stimulate the taste and visual senses. This cocktail, "Pluma," was created with the themes of "sustainability" and "revival of lost traditions." By using B-grade tomatoes and flat tonic water that would otherwise be discarded, and using all the by-products of the preparation process, a sustainable drink is achieved. The garnish is made with tomatoes marinated in spices that began trading when the port of Yokohama opened. The inspiration for this cocktail comes from the traditional Mexican dish of Jalisco, "birria," in which ingredients are steamed with agave leaves, and the ancient Japanese culture of "Kaishiki," both of which symbolize "wrapping" and "protection," and the power of "mugwort," which is said to exorcise evil spirits. The colors are inspired by the Mexican flag. The presence of the "eagle" that secretly resides within it is a hidden symbol in this drink, which is based on the soul of Mexico, tequila, and is made with healthy ingredients. "Pluma" means wings in Spanish. It was created with the hope that it will gently touch the drinker's sensibilities, build a bridge between the past and the future, ingredients and culture, and help the maker and drinker soar.
