The shaping of our Steak meat Generally, the weight of Steak is often indicated including the amount of fat, but at our restaurant, we remove all unnecessary fat before serving it to you, leaving only "net" lean meat. The weight shown on our course menus and single items is the weight after the meat has been shaped and the fat and tendons have been removed.
